Makes 12 muffins
¼ cup- Softened Butter
¼ cup- Sugar
1/3 cup- Maple Syrup
1 & 1/2 cup- Flour
1 tablespoon- Baking Powder
½ teaspoon- Salt
1 cup- Milk
¾ cup- Oat Bran
1 cup- Fresh or Frozen Blueberries
¼ cup- Chopped Nuts (optional)
2 tablespoon- butter melted
2 tablespoon- brown sugar
1 teaspoon- cinnamon
Step 1: Preheat Oven to 400°F (200°C).
Step 2: In a bowl with a hand mixer beat butter and sugar until creamy, beat in egg and maple syrup.
Step 3: In separate bowl sift flour, salt, baking powder.
Step 4: Mix flour mixture into the butter mixture slowly and gradually add milk while mixing to avoid clumps.
Step 5: Stir in bran, blueberries and nuts if desired.
Step 6: Grease muffin tins and fill ¾ of the way up each tin with batter.
Step 7: To make the topping combine the butter, sugar, and cinnamon and distribute evenly on top of the muffin batter in the tins.
Step 8: Bake at 400°F (200°C) for 25-35 minutes.
