Blueberry Maple Muffins


Makes 12 muffins


Ingredients

  • ¼ cup- Softened Butter

  • ¼ cup- Sugar

  • 1 Egg

  • 1/3 cup- Maple Syrup

  • 1 & 1/2 cup- Flour

  • 1 tablespoon- Baking Powder

  • ½ teaspoon- Salt

  • 1 cup- Milk

  • ¾ cup- Oat Bran

  • 1 cup- Fresh or Frozen Blueberries

  • ¼ cup- Chopped Nuts (optional)

Topping

  • 2 tablespoon- butter melted

  • 2 tablespoon- brown sugar

  • 1 teaspoon- cinnamon

 

Step 1: Preheat Oven to 400°F (200°C).


Step 2: In a bowl with a hand mixer beat butter and sugar until creamy, beat in egg and maple syrup.


Step 3: In separate bowl sift flour, salt, baking powder.


Step 4: Mix flour mixture into the butter mixture slowly and gradually add milk while mixing to avoid clumps.


Step 5: Stir in bran, blueberries and nuts if desired.


Step 6: Grease muffin tins and fill ¾ of the way up each tin with batter.


Step 7: To make the topping combine the butter, sugar, and cinnamon and distribute evenly on top of the muffin batter in the tins.


Step 8: Bake at 400°F (200°C) for 25-35 minutes.
